B-590.72.111 [2022-09] Nickel (Ni) – Spectrophotometric Method

The elements found in the human body are, according to their respective concentrations, divided into minerals and trace elements. These comprise elements, such as potassium, calcium, sodium, magnesium, iron, copper, zinc and manganese, which are already present in dissolved (ionized) form in wort or beer. The positively charged particles are known as cations.

The nickel content of beer may increase through contact with stainless steel. Beer foam stabilizers may also contain nickel. All heavy metals, including nickel, have an impact on the foam stability as well as the colloidal stability of beer.

Application/Purpose

Determination of the nickel content by means of spectrophotometry

Scope of Application

Suitable for all types of wort, beer and beer-based beverages

Principle

After digestion of the sample, a complex is formed with dimethylglyoxime which is then measured photometrically.
