Direct detection of foreign organisms in the brewery yeasts. In particular, obligate beer-spoilage organisms (gram-positive lactic acid bacteria such as lactobacilli, pediococci and gram-negative anaerobes) as well as wild yeasts can be quickly identified under a dark-field microscope.
